I love jack, mozzarella, parmesan... but I dont discriminate, I like yellow cheese too.. amazing, fresh sharp cheddar. oooh, or some ricotta.

Let me clarify. I used to be a huge cheese fan. I loved dairy. I used to drink about two gallons of milk a week.

I stopped as i had read a number of articles that convinced me to, at least for a short time, quit milk altogether. Last year for the whole month of january i went pesco vegan. no dairy, cheese, whatever. Dropped 10 pounds (not including the initial few with water weight). my energy shot through the roof. Even though i'm not a pesco-vegan anymore...i still don't do dairy. Why? Because on the first of february, i decided to have a piece of cheese pizza....and it really did make me sick. so yeah, i just learned that i should exclude it from my diet.

I dare anyone to go a week without any dairy. it's like...7 days out of 365 this year. what have you got to lose?

Anyways, back to the point: having worked in a number of classy dining gigs, I've found of all the cheeses I had come to taste on a burger (and this includes pepperjack), that havarti is the absolute best. (btw...dont' load it up with a lot of dressings. you'll ruin the flavor of it....kinda like adding A1 to a Ruth Chris Petit Filet).

If that's not your bag....i've always enjoyed using pepperjack, adding a few jalapenos, and mixing just a little bit of chipotle sauce with mayo.

I've also excluded milk from my diet, seem to have developed some sort of intolerance over the years even though I grew up on it. Weird.

Absolutely, the smellier the better as far as I'm concerned. I sometimes like to leave a moudly cheese to go out of date before I eat it just to give it that extra kick.
