I've been a vegetarian for 26 years. I watched Apocolypse Now and a particular scene where a bull was sacrificed did it. Couldn't eat meat or fish anymore thereafter. It's been a very educational journey and I'm thankful for not being too ignorant about our food industry. I buy free range organic eggs, rennet free cheeses and organic milk. Do my best is all I can!

I'm definately a see-food person .. love trying anything (within reason) especially from around the world.

Very partial to seafood when on the coast, but love a veal chop or wild boar stew.

Also if you can curry it, tagine it, casserole it, bbq it or stir-fry it I'm a happy bun.

i wouldnt categorize my eating habits, i eat what my body tells me it needs i havent had meat in over a year i think, sometimes i eat only fruits - depends on where i am atm, if its warm or cold climate and i might eat meat again, i really dont care about the labels for.ex. goji berries have loads of proteins so i have no need to eat meat organic super foods would be my choice and chocolate is one of them... :D

Since I moved I've dropped 10 pounds without doing anything other than just eating less and healthier. I love asian food, sushi and rice/noodles and light meals are my favorite. I haven't eaten fast food since I've moved. Small portions and general healthy meals besides a double whopper with deep fried pork rinds is always a good thing. Greasy lunch like my coworkers love to do is the worst....just staying away from crap food is my diet. :D

With so many foods around to world to flavour from, there is no way in hell I could ever be a vegan....

x10 on that medium rare steak stuff.. my best friends boyfriend knows exactly how I like it and mind you is always better than any restaurant gourmet stuff that I've tried. Plus there is sea food... can never say no to a good snapper escovitch, lobster thermidor, escargot, calamari...ooh I could go on forever. And I do enjoy a Mediterranean/exotic salad ever so often as well.

This thread reminds me of time I tried Afghan, Brazilian and Vietnamese food for the first time, I was pleasantly surprised. We should start a thread with the most interesting food we've ever had ...lol

yup. that's the reason i'd get it. i rarely eat red meat though, but i'm growing into it. i'd probably use it for chicken or something.

duck fat is great. i bought a small tub the other week. a little pricey, but they make the potatoes and mushrooms taste AMAZING.

how do you render your duck fat? I mean, what'st he process? where do you get the bulk duck fat? I've rendered beef fat before, and I've got some chicken fat that I've already rendered. i just don't know where to get duck fat to render.

Do not buy duck fat. Buy a duck.

There is a farmers market a couple of miles from our house that sells whole fresh ducks on the weekends. $13 per duck. You do the butchering, it's fun, and you should know how to do that anyway. If you don't know how to butcher a duck, youtube can probably tell you.

Once you've removed all the good stuff (breasts, leg, etc) what's left is where you're getting your fat. Start trimming the carcass, all the skin and fat, chopping everything up into small bite size pieces. Throw those bits into an iron skillet or a heavy pot with a little water, prob 1/2 cup per duck, and cook it over medium heat for about an hour. What's left is two amazing things: 1. a shitload of clear heavenly liquid- aka Duck Fat. 2. Cracklins! Drain the fat (might want to run it through a light strainer) into a jar and put it in the fridge. Put all the cracklins on a paper towel and pat them dry. Open a can of beer and start shoving those cracklins in your face and wash them down with beer. I prefer to do this with no pants on. It's amazing. Crispy, salty, duck skin/fat chips and beer. mmmmmm.

That is the cheapest and most fun way to get yourself some duck fat... plus you get all the duck meat to cook later. Med rare pan seared duck breast is awesome. for $13 bucks, you get a several amazing meals providing you know how to prepare duck leg, duck breast, you get a jar of fat that'll last you a long time, and you get the cracklin snacks that you drool over with beer when you're done. It's an amazing couple of hours.

That just isn't true. Just because we have the [I]ability [/I]to digest meat doesn't mean that's what we're supposed to eat. Our bodies actually better off on a plant based diet, and throughout time most humans have lived a mostly vegetarian diet. We have only recently in the past couple generations become meat lovers. We're more closely linked with herbivores than carnivores in nearly every category, and our bodies thrive on plants rather than meats, although the commercialized meat industry will tell you differently. I just don't buy it. Isnt there the argument that although it took us hundreds of years to become meat eaters, that doesnt mean that we were meant to be vegeterian.

From a personal point of view, if I have a meal of pasta with no meat in, or a meal of pasta with meat in e.g. lasagna I know which one will make me feel better afterward.

here's an example- compare the saliva of carnivores vs. herbivores. flesh eating animals have acidic saliva which breaks down meat, humans have alkaline saliva, which does not break down meat, but does break down plants, like herbivores do. Done and done. I didn't get too many cracklins from rendering the beef though, but ah well.

13 bucks per duck? Damn. I paid 8 for 8 oz of duck fat. how much fat did you end up with?

Also, is it your belief that store-bought duck fat is no good? or is it just that it's more fun to spend the time doing it the old-timey way (which i AM into doing btw.)

I can understand that the majority of people don't want to give up eating animals but most of you would have to admit that it's gotten to the point where it's gluttonous and wasteful. Our factory farming practices are horrid and shameful. If more people would follow the rule of a vegetarian diet during the week and animals on the weekend it would make a massive difference to our farming practices, enviroment and health. If people could see the way these animals are treated they might feel morally compelled to make changes in their diets but alas, people love to live in blissful ignorance.
