I have the Director's Cut DVD, i am not sure how it differs from the theatrical version. Its definitely worth the buy

I think there were a few different versions of this movie. I think the main differences include the Harrison Ford voice over that he was forced to do, and the unicorn dream sequence.

There was one released in around 2002, but it was still the bare bones director's cut (no trailers, not much in the way of extras) with a lot of promo material and the CD soundtrack.

There's been talk of releasing an anniversary edition sometime in the near future (probably 2007, as that will be the 25th anniversary), but they want to get Ridley Scott to do a commentary, Harrison Ford to do one as well (both he and Ridley Scott did not get along while making the film, but have an uneasy respect for each other's work now) and a host of other features like an isolated score that they want to get around to doing. Things keep getting put off.
